Vegetable Fried Rice

Vegetable Fried Rice is a colorful, quick, and wholesome dish made with day-old rice, crisp stir-fried vegetables, and savory sauces. It’s a perfect balance of flavor, texture, and nutrition — ideal for lunch, dinner, or a tasty side. Whether served on its own or paired with gravies, this rice dish is always a crowd-pleaser.

Ingredients

  • 2 cups cooked basmati rice (preferably a day old)

  • 2 tbsp oil (vegetable or sesame oil for extra flavor)

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 1 cup mixed vegetables (carrots, peas, capsicum, corn, beans — finely chopped)

  • 2 green chilies, chopped (optional)

  • 2–3 tbsp soy sauce

  • 1 tbsp vinegar (optional)

  • Salt and black pepper to taste

  • Spring onions (for garnish)

Instructions

1. Prep the Rice

  • Use cold, cooked rice for best results. Leftover rice works perfectly — it won’t turn mushy.

2. Stir-Fry the Veggies

  1. Heat oil in a wok or large pan.

  2. Add garlic and onion. Sauté until translucent.

  3. Add green chilies and all chopped vegetables. Stir-fry on high heat for 4–5 minutes until slightly tender but still crunchy.

3. Add Rice and Seasonings

  1. Add the rice to the veggies and gently mix.

  2. Pour in soy sauce and vinegar. Season with salt and pepper.

  3. Stir-fry everything on high heat for another 2–3 minutes.

4. Garnish and Serve

  • Garnish with chopped spring onions or a squeeze of lemon juice if you like it zesty.
